Team <span aria-label=\"Hawaii\">Hawai\u02bbi<\/span> is competing at the <a href=\"http:\/\/www.acfchefs.org\/ACF\/Events\/Convention\/ACF\/Events\/Convention\/\">2017 Cook. Craft. Create. American Culinary Federation National Convention and Show<\/a>\u2014considered the national collegiate culinary championship\u2014in Orlando, Florida beginning July 11. The winners will be announced on July 13.<\/p>\n<p>\u201cIt\u2019s a big deal, for not only for the school and <span aria-label=\"Hawaii\">Hawai\u02bbi<\/span> but for these students. It\u2019s a great opportunity for them to see something new and to challenge themselves,\u201d said <span aria-label=\"Kapiolani\">Kapi\u02bbolani<\/span> <abbr title=\"Community College\">CC<\/abbr> Lead Chef Instructor <strong>Jason Peel<\/strong>.<\/p>\n<p>\u201cI just hope we come back and make everybody proud. Lee<\/strong>, <strong>Kimberly Lim<\/strong>, <strong>Qihao (Sam) Tan<\/strong>, <strong>Sean Uyehara<\/strong>, <strong>Christian Rae Wong<\/strong>\u2014has been practicing non-stop since <a href=\"https:\/\/www.hawaii.edu\/news\/2016\/12\/13\/kapiolani-cc-culinary-teams-win-at-hawaii-acf-competition\/\">winning the state competition in December<\/a> and western regionals in February. They will face the three other regional winners and a military team for the national title.<\/p>\n<ul>\n<li><a href=\"http:\/\/www.hawaii.edu\/news\/2017\/02\/16\/culinary-team-hawaii-goes-for-the-gold\/\">Meet Team <span aria-label=\"Hawaii\">Hawai\u02bbi<\/span><\/a><\/li>\n<\/ul>\n<p>\u201cWe are very much a family. We are all so close,\u201d said Wong. \u201cWe spend eight hours in the kitchen all day and we go have dinner afterwards.\u201d<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-62215\" src=\"http:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2017\/07\/kapiolani-culinary-team-hawaii-2017-food.jpg\" alt=\"culinary student preparing dishes\" width=\"300\" height=\"300\" srcset=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2017\/07\/kapiolani-culinary-team-hawaii-2017-food.jpg 300w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2017\/07\/kapiolani-culinary-team-hawaii-2017-food-130x130.jpg 130w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2017\/07\/kapiolani-culinary-team-hawaii-2017-food-260x260.jpg 260w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>Team <span aria-label=\"Hawaii\">Hawai\u02bbi<\/span> has been coached by Peel and <span aria-label=\"Kapiolani\">Kapi\u02bbolani<\/span> <abbr>CC<\/abbr> Chefs <strong>David Brown<\/strong> and <strong>Alan Tsuchiyama<\/strong>.<\/p>\n<p>\u201cYou look at our group, and they are all from different backgrounds and cultures,\u201d said Peel. \u201cThey all have different flavors that they can bring to the table and they work together and taste together.\u201d<\/p>\n<p>The team has been working hard perfecting their menu and preparing for pressure of competition. On day one of the competition, they will have to prep a cold food buffet platter utilizing a market basket filled with rabbit, peas, corn, red lentils and Habanero chilies. And on day two, they\u2019ll have 110 minutes to prepare a four-course meal and will present that along with their cold platter\u2014all in front of a live audience.<\/p>\n<p>\u201cIt\u2019s going to a new kitchen and just going for it. It\u2019s a lot of improvisation in the moment,\u201d said team member Jeremy David.<\/p>\n<p>\u201cIt\u2019s just a total different environment with judges breathing down your neck, trying to throw you off your game,\u201d said Peel.<\/p>\n<p>Team <span aria-label=\"Hawaii\">Hawai\u02bbi<\/span> is hoping their dishes bring the title back home. <span aria-label=\"Kapiolani\">Kapi\u02bbolani<\/span> won the national championship in 2009.<\/p>\n<p>\u201cWe are all going to do our best and hope that we represent <span aria-label=\"Hawaii\">Hawai\u02bbi<\/span> very well,\u201d said David.<\/p>\n<blockquote><p><strong>Team <span aria-label=\"Hawaii\">Hawai\u02bbi<\/span>\u2019s menu:<\/strong><\/p>\n<ul>\n<li>lobster chawan mushi, with black garlic and truffle<\/li>\n<li>compressed melon and tomato salad with avocado, yogurt, sesame and yuzu<\/li>\n<li>Thai inspired chicken with green curry and coconut<\/li>\n<li>Mango mousse, lilikoi curd, vanilla panna cotta and raspberry-lychee sorbet<\/li>\n<\/ul>\n<\/blockquote>\n<p><a name=\"competitionday\"><\/a><br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-62413\" src=\"http:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2017\/07\/kapiolani-culinary-competition-2017.jpg\" alt=\"Plated food\" width=\"620\" height=\"407\" srcset=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2017\/07\/kapiolani-culinary-competition-2017.jpg 620w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2017\/07\/kapiolani-culinary-competition-2017-260x171.jpg 260w\" sizes=\"auto, (max-width: 620px) 100vw, 620px\" \/><\/p>\n<p>View more photos on the <a href=\"https:\/\/www.flickr.com\/photos\/uhawaii\/albums\/72157685944721575\">University of Hawai\u02bbi Flickr site<\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Team Hawai\u02bbi is competing at the 2017 Cook.
