He has taught in various cities in China, including Xi&#699;an, Hangzhou and Shanghai and held chef positions in Alaska, Connecticut, <span aria-label=\"Oahu\">O&#699;ahu<\/span> and the Big Island before accepting a faculty position in the <a href=\"https:\/\/sites.google.com\/a\/hawaii.edu\/culinary-arts\/\">Culinary Arts Program<\/a> at <span aria-label=\"Kauai\">Kaua&#699;i<\/span> <abbr>CC<\/abbr> in 1992.<\/p>\n<p>New to <span aria-label=\"Kauai\">Kaua&#699;i<\/span> <abbr>CC<\/abbr>, Oyama was soon thrust into the role of managing the kitchen while the college served as a major shelter after Hurricane Iniki ravaged the island on September 11, 1992. In a month, more than 90,000 meals were prepared for those who sought refuge at the college. <\/p>\n<p>During that first year, Oyama also mentored students who entered the state-wide culinary competition, Culinary Arts and Suppliers Exhibition, on <span aria-label=\"Oahu\">O&#699;ahu<\/span>, where they won first place and brought home the Chancellor&#8217;s Trophy. As a judge of the competition, his mentor, <span aria-label=\"Kapiolani\">Kapi&#699;olani<\/span> <abbr>CC<\/abbr> Chef Instructor <strong>Ernst Hiltbrandt<\/strong>, witnessed Oyama&#8217;s successful utilization of what he learned as a student in teaching his own students. Oyama has led <span aria-label=\"Kauai\">Kaua&#699;i<\/span> <abbr>CC<\/abbr> students to numerous gold and silver medals in other competitions.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2015\/10\/kauai-oyama-m-2.jpg\" alt=\"Mark Oyama in kitchen\" width=\"620\" height=\"412\" class=\"size-full wp-image-38969\" srcset=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2015\/10\/kauai-oyama-m-2.jpg 620w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2015\/10\/kauai-oyama-m-2-260x173.jpg 260w\" sizes=\"auto, (max-width: 620px) 100vw, 620px\" \/><\/p>\n<p>Oyama teaches students that food is connected to every emotion and life occasion, ranging from joyous to sorrowful. It must be of the highest level of quality and fit the occasion.
