The course was made possible through a four-year, &#36;950,000 grant from the National Institute of Food and Agriculture, a division of the U.S. Department of Agriculture (<abbr>USDA<\/abbr>).<\/p>\n<p>&ldquo;We are excited to be able to offer this new course and others at K&#333; Education Center,&rdquo; said <span aria-label=\"Hawaii\">Âé¶¹´«Ã½<\/span> <abbr title=\"community college\">CC<\/abbr> Chancellor Susan Kazama. &ldquo;The <abbr>USDA<\/abbr> grant aims to improve opportunities for Native Hawaiian and underserved students in agriculture-related fields and fits perfectly with our college\u2019s mission to train students for jobs on our island.&rdquo;<\/p>\n<figure id=\"attachment_204798\" aria-describedby=\"caption-attachment-204798\" style=\"width: 300px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2024\/10\/hawaii-cc-butchery-course-3-300x169.jpg\" alt=\"two men shaking hands\" width=\"300\" height=\"169\" class=\"size-medium wp-image-204798\" srcset=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2024\/10\/hawaii-cc-butchery-course-3-300x169.jpg 300w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2024\/10\/hawaii-cc-butchery-course-3-130x73.jpg 130w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2024\/10\/hawaii-cc-butchery-course-3.jpg 676w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-204798\" class=\"wp-caption-text\">From left: Wade Cypriano and and Bill Wong<\/figcaption><\/figure>\n<p>The first of its kind at <span aria-label=\"Hawaii\">Âé¶¹´«Ã½<\/span> <abbr>CC<\/abbr>, the course offers students comprehensive, hands-on training in butchery, including humane slaughter methods, carcass breakdown and meat processing. The curriculum also covers food safety standards, proper meat labeling and animal husbandry, to prepare students for employment in <span aria-label=\"Hawaii\u2019s\">Âé¶¹´«Ã½\u2019s<\/span> butchery industry. The training is part of the <abbr title=\"University of Hawaii\">UH<\/abbr> Meat and Poultry Workforce Consortium, in collaboration with <a href=\"https:\/\/hilo.hawaii.edu\/\"><abbr>UH<\/abbr> Hilo<\/a> and <abbr>UH<\/abbr> M&#257;noa\u2019s <a href=\"https:\/\/cms.ctahr.hawaii.edu\/\">College of Tropical Agriculture and Human Resources<\/a>.<\/p>\n<p>&ldquo;We are pioneering the kind of butchery that\u2019s needed today,&rdquo; said Bill Wong, co-founder and owner of 17 Ranch in Kohala. &ldquo;This course is a small piece but it comes at a time when we are concerned about the future of our planet and our food sources. What students will learn in six weeks would normally take a year to learn in the workforce.&rdquo;<\/p>\n<p><span aria-label=\"Hawaii\">Âé¶¹´«Ã½<\/span> <abbr>CC<\/abbr> announced the butchery course during the 2024 H&#257;m&#257;kua Sugar Days Festival in October. The festival, celebrating the 30th anniversary of the closure of the last local sugar plantation, honors H&#257;m&#257;kua\u2019s agricultural past while showcasing new initiatives like the butchery course. An information booth will be set up on October 12 during the festival\u2019s parade day to share details about the course.<\/p>\n<h2>Crucial opportunities for rural communities<\/h2>\n<p>Nicole Garcia, executive director of the <span aria-label=\"Honokaa\">Honoka&#699;a<\/span> Heritage Center and coordinator of the H&#257;m&#257;kua Sugar Days Festival, said it\u2019s crucial for small, rural communities to have access to post-secondary education, technical training and certificate courses to provide opportunities for everyone in the community.<\/p>\n<p>&ldquo;I think our community will greatly benefit from the butchery program,&rdquo; said Garcia. &ldquo;It aligns perfectly with the needs of our area, where ranching is such a big part of life. I\u2019m particularly excited to see this program fill a critical gap, offering valuable professional development close to home.&rdquo;<\/p>\n<p>The grant is part of a larger effort to improve pathways for Native Hawaiian and underserved students in agriculture-related fields.
