It was the culmination of a two-day collaboration in November, blending sustainability, education and the importance of honey bees in our ecosystem.<\/p>\n<figure id=\"attachment_188173\" aria-describedby=\"caption-attachment-188173\" style=\"width: 214px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2023\/12\/kapiolani-culinary-hilo-honey-4-214x300.jpg\" alt=\"Student pouring honey into a cup\" width=\"214\" height=\"300\" class=\"size-medium wp-image-188173\" srcset=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2023\/12\/kapiolani-culinary-hilo-honey-4-214x300.jpg 214w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2023\/12\/kapiolani-culinary-hilo-honey-4-93x130.jpg 93w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2023\/12\/kapiolani-culinary-hilo-honey-4.jpg 250w\" sizes=\"auto, (max-width: 214px) 100vw, 214px\" \/><figcaption id=\"caption-attachment-188173\" class=\"wp-caption-text\"><span aria-label=\"Kapiolani\">Kapi&#699;olani<\/span> <abbr>CC<\/abbr> students using <abbr>UH<\/abbr> Hilo honey in each dish<\/figcaption><\/figure>\n<p>The event incorporated honey produced by <abbr title=\"University of Hawaii\">UH<\/abbr> Hilo\u2019s apiary into a specially crafted menu made by <span aria-label=\"Kapiolani\">Kapi&#699;olani<\/span> <abbr title=\"Community College\">CC<\/abbr> Chef Alan Tsuchiyama and <a href=\"https:\/\/www.kapiolani.hawaii.edu\/programs\/culinary\/\">culinary arts program<\/a> students in his &ldquo;American Regional and Sustainable&rdquo; course. The dishes included:<\/p>\n<ul>\n<li>Honey and smoked paprika southern fried Ludovico Farm chicken<\/li>\n<li>Honey bbq smoked pork ribs<\/li>\n<li>Honey glazed sweet potato, apple banana and candied nuts<\/li>\n<li>Mari\u2019s Garden greens with house smoked honey bacon bits, honey glazed macadamia nuts and honey mustard vinaigrette<\/li>\n<li>Honey butter cornbread<\/li>\n<li>Honey vanilla panna cotta topped with braised honey pineapple<\/li>\n<\/ul>\n<p>&ldquo;We learned about the vital role that honey bees play in our community,&rdquo; said <span aria-label=\"Kapiolani\">Kapi&#699;olani<\/span> <abbr>CC<\/abbr> culinary student Lauren Horita. &ldquo;Honey bees are the pollinators of crops, allowing us to have an abundance of produce to create dishes. I loved that we utilized the honey from <abbr>UH<\/abbr> Hilo in various dishes and learned a lot about the varieties of honey, the describer factors and grades of honey.&rdquo;\u00ad\u00ad<\/p>\n<h2>Adopt-A-Beehive Program with Alan Wong<\/h2>\n<figure id=\"attachment_188175\" aria-describedby=\"caption-attachment-188175\" style=\"width: 300px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2023\/12\/kapiolani-culinary-hilo-honey-6-300x169.jpg\" alt=\"Three people at U H Hilo honey and Kapiolani C C table\" width=\"300\" height=\"169\" class=\"size-medium wp-image-188175\" srcset=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2023\/12\/kapiolani-culinary-hilo-honey-6-300x169.jpg 300w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2023\/12\/kapiolani-culinary-hilo-honey-6-130x73.jpg 130w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2023\/12\/kapiolani-culinary-hilo-honey-6.jpg 676w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-188175\" class=\"wp-caption-text\">Chef Alan Wong, Lorna Tsutsumi, and Chef Alan Tsuchiyama<\/figcaption><\/figure>\n<p>Now in its 13th year, the Adopt-A-Beehive Program raises awareness about honey bees&#8217; vital role in agriculture and the environment while financially supporting <abbr>UH<\/abbr> Hilo beekeeping students working towards their degrees.<\/p>\n<p>&ldquo;Chef Alan Wong and I are very grateful for the opportunity to work with Chef Tsuchiyama and his culinary students,&rdquo; said Lorna Tsutsumi, <abbr>UH<\/abbr> Hilo professor of entomology and co-founder of the Adopt-A-Beehive Program. &ldquo;He took the honey harvested by the beekeeping students at <abbr>UH<\/abbr> Hilo farm and, with the skills that he imparts to his students, turned it into a fantastic meal for our community program supporters. Their insightful lecture gave the students a deeper understanding of the journey from hive to table and emphasized the responsibilities of a chef regarding agriculture, sustainability and scarcity of ingredients.<\/p>\n<p>&ldquo;This experience with Chef Wong and Professor Tsutsumi has opened my eyes to how crucial honey bees are in our lives and as culinary professionals,&rdquo; said student Ruth Cundiff. &ldquo;Without bees to pollinate, we will start to see a scarcity in ingredients that are used daily.
