The dessert was served during the fall 2023 semester at the college\u2019s fine dining restaurant <a href=\"https:\/\/www.leeward.hawaii.edu\/thepearl\">The Pearl<\/a>, and was a hit with patrons from the campus and the community.<\/p>\n<p>According to Chris Garnier, a culinary arts assistant professor, &ldquo;It takes a little bit of work to make this dish, but it\u2019s light and flavorful, and would be the perfect way to finish a heavy holiday meal.&rdquo;<\/p>\n<h2>Dry Caramel<\/h2>\n<p>8 ramekins (small, single-serving round dishes)<br \/>\n&#189; cup granulated sugar<br \/>\n&#8539; cup water<\/p>\n<p><strong>Method for Dry Caramel:<\/strong><\/p>\n<ol>\n<li>Place ramekins in a baking sheet pan (a baking sheet pan has rolled edges with a lip around the entire pan).<\/li>\n<li>Combine water and sugar in the saucepan and begin to melt.<\/li>\n<li>Cook water\/sugar mixture until it is a golden brown color.<\/li>\n<li>Distribute caramel liquid evenly into the 8 ramekins.<\/li>\n<\/ol>\n<p><span class=\"blocklink\"><a href=\"https:\/\/www.hawaii.edu\/news\/tag\/uh-holiday-recipes\/\">Check out holiday recipes from previous years<\/a><\/span><\/p>\n<h2>Flan Custard<\/h2>\n<p>2 cups whole milk<br \/>\n1 cup heavy whipping cream<br \/>\n&#8532; cup granulated sugar<br \/>\n&#8539; <abbr title=\"teaspoon\">tsp<\/abbr>. salt<br \/>\n4 large eggs<br \/>\n2 large egg yolks<br \/>\n1 vanilla bean, or 1 <abbr title=\"teaspoon\">tsp<\/abbr>. vanilla extract<br \/>\nUbe extract to color<\/p>\n<p><strong>Method for Flan Custard:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 325&#176;.<\/li>\n<li>Add all ingredients in a large mixing bowl.<\/li>\n<li>Blend everything with a hand blender until smooth.<\/li>\n<li>Let the blended mix rest until all the air is out (when bubbles disappear, no less than 15 minutes).<\/li>\n<li>Pour mixture into ramekins that have the caramel in them.<\/li>\n<li>Fill water outside of ramekins in the baking sheet pan to create a water bath. The water bath should be filled no more than half of the baking sheet pan\u2019s height.<\/li>\n<li>Place the baking sheet pan with custard filled ramekins into the oven. Bake for 30&#8211;35 minutes or until the flan is firm.<\/li>\n<\/ol>\n<h2>Ube Halaya Jam<\/h2>\n<p>2 lbs.
