He competed on season 10 of Top Chef, won the coveted &ldquo;Fan Favorite&rdquo; title and finished as a finalist. He attended Leeward <abbr>CC<\/abbr> and graduated from <abbr title=\"University of Hawaii\">UH<\/abbr> Maui College.<\/p>\n<p>&ldquo;The most important thing, I think, is a deep connection to the ingredients and that everyone has their own food story, and it\u2019s up to them to tell that story,&rdquo; Simeon said.<\/p>\n<p>Thirteen students in Chef <strong>Alan Tsuchiyama<\/strong>\u2019s American Regional Cuisine class prepared dishes from Simeon\u2019s book <em>Cook Real <span aria-label=\"Hawaii\">Âé¶¹´«Ã½<\/span><\/em>. These included:<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2023\/01\/kapiolani-culinary-splendid-table-students-300x169.jpg\" alt=\"Two culinary students preparing food\" width=\"300\" height=\"169\" class=\"alignright size-medium wp-image-171610\" srcset=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2023\/01\/kapiolani-culinary-splendid-table-students-300x169.jpg 300w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2023\/01\/kapiolani-culinary-splendid-table-students-130x73.jpg 130w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2023\/01\/kapiolani-culinary-splendid-table-students.jpg 676w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<ul>\n<li>Pork belly adobo<\/li>\n<li>Pohole salad<\/li>\n<li>Chili pepper water<\/li>\n<li>Charred fish sinigang<\/li>\n<li>Pinakbet<\/li>\n<li>Huli huli chicken<\/li>\n<li>Pancit<\/li>\n<\/ul>\n<p>&ldquo;There\u02bbs no such thing as &lsquo;authentic,&rsquo;&rdquo; said culinary student <strong>Chloe Herbert<\/strong>, following Simeon\u02bbs talk to the class. &ldquo;I think he really shows that in his book that <span aria-label=\"Hawaii\">Âé¶¹´«Ã½<\/span> cuisine comes from all different walks of life from all different cultures and different things like that and how in tune he is with nature&#8212;it\u2019s really inspiring to see somebody so close to nature and food.&rdquo;<\/p>\n<p>The Splendid Table is broadcast on more than 400 public radio stations and SIRIUS satellite radio. <a href=\"https:\/\/www.splendidtable.org\/bio\/francis-lam\">Lam<\/a> is vice president and editor-in-chief at Clarkson Potter.
