The hope is these recipes and the short stories that accompany them will give everyone some recipe ideas for the holidays.<\/em><\/p>\n<p><strong>Alan Tsuchiyama<\/strong>, a <a href=\"https:\/\/www.kapiolani.hawaii.edu\/\"><span aria-label=\"Kapiolani\">Kapi&#699;olani<\/span> Community College<\/a> alumnus and faculty member for 23 years, shared his family\u2019s recipe for ozoni, a simmered mochi soup that is traditionally the first meal of the new year as an expression of good fortune and luck for the coming year.<\/p>\n<figure id=\"attachment_170674\" aria-describedby=\"caption-attachment-170674\" style=\"width: 214px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2022\/12\/kapiolani-ozoni-tsuchiyama-214x300.jpg\" alt=\"Chef\" width=\"214\" height=\"300\" class=\"size-medium wp-image-170674\" srcset=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2022\/12\/kapiolani-ozoni-tsuchiyama-214x300.jpg 214w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2022\/12\/kapiolani-ozoni-tsuchiyama-93x130.jpg 93w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2022\/12\/kapiolani-ozoni-tsuchiyama.jpg 250w\" sizes=\"auto, (max-width: 214px) 100vw, 214px\" \/><figcaption id=\"caption-attachment-170674\" class=\"wp-caption-text\">Alan Tsuchiyama<\/figcaption><\/figure>\n<p>Each family and region in Japan has its own ozoni recipe, and Japanese immigrants carried the recipe to <span aria-label=\"Hawaii\">Âé¶¹´«Ã½<\/span>. Tsuchiyama inherited this &ldquo;simple&rdquo; version of ozoni from his mother-in-law (from the Miura family of Honolulu).<\/p>\n<p>&ldquo;[She] used to make it for the household,&rdquo; he said. &ldquo;Now I carry the tradition.&rdquo;<\/p>\n<p>According to Tsuchiyama, the key to making this &ldquo;clean-tasting broth&rdquo; is to find quality ingredients from local markets.<\/p>\n<p>&ldquo;The large and orange dried shrimp can be found at Tamashiro Market on North King Street, while the mochi can be purchased at Nisshodo Candy Store on Dillingham Boulevard,&rdquo; he said. &ldquo;We teach our students about supporting local businesses and so it\u2019s important to do the same.&rdquo;<\/p>\n<p><span class=\"blocklink\"><a href=\"https:\/\/www.hawaii.edu\/news\/tag\/uh-holiday-recipes\/\">See more <abbr>UH<\/abbr>-mazing holiday recipes<\/a><\/span><\/p>\n<p>Tsuchiyama teaches the American and Sustainable Cuisines class and also runs the 220 Grill, a sustainable food bistro, on the <span aria-label=\"Kapiolani\">Kapi&#699;olani<\/span> <abbr>CC<\/abbr> campus.<\/p>\n<h2>Grandma Yama\u2019s New Year\u2019s Day Ozoni<\/h2>\n<p><strong>Yield<\/strong>: 6 servings<\/p>\n<p><strong>Ingredients for the clear soup &ldquo;osumashi&rdquo;<\/strong><\/p>\n<ul>\n<li>1 gallon water<\/li>\n<li>1 &#189; cups dried shrimp (good quality, large and orange)<\/li>\n<li>&#188; cup shoyu<\/li>\n<li>1 <abbr title=\"tablespoon\">Tbsp<\/abbr>. salt<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>Simmer dried shrimp in water for one hour.<\/li>\n<li>Strain or remove the shrimp.<\/li>\n<li>Add shoyu and salt.
