While they may have had the starchy fruit baked, boiled or fried into chips, they probably never envisioned it in curry <span aria-label=\"ulu\">&#699;ulu<\/span> \/ sweet potato &ldquo;croquettes,&rdquo; miso <span aria-label=\"ulu\">&#699;ulu<\/span> fried rice, vegan <span aria-label=\"luau\">l&#363;&#699;au<\/span> or caramelized <span aria-label=\"ulu\">&#699;ulu<\/span> bread pudding.<\/p>\n<figure id=\"attachment_145385\" aria-describedby=\"caption-attachment-145385\" style=\"width: 300px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2021\/07\/kapiolani-culinary-ulu-fujimoto-300x169.jpg\" alt=\"Fujimoto picking ulu\" width=\"300\" height=\"169\" class=\"size-medium wp-image-145385\" srcset=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2021\/07\/kapiolani-culinary-ulu-fujimoto-300x169.jpg 300w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2021\/07\/kapiolani-culinary-ulu-fujimoto-130x73.jpg 130w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2021\/07\/kapiolani-culinary-ulu-fujimoto.jpg 676w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-145385\" class=\"wp-caption-text\">Christopher Fujimoto<\/figcaption><\/figure>\n<p>These mouthwatering creations were part of a recent undergraduate research project into the obstacles to cooking and consuming <span aria-label=\"ulu\">&#699;ulu<\/span> by recent <span aria-label=\"Kapiolani\">Kapi&#699;olani<\/span> Community College <a href=\"https:\/\/www.kapiolani.hawaii.edu\/academics\/programs-of-study\/culinary-arts-program\/\">Culinary Arts Program<\/a> graduate <strong>Christopher Fujimoto<\/strong> at the <a href=\"http:\/\/culinary.kapiolani.hawaii.edu\/culinary-innovation-center\/\">Culinary Innovation Center<\/a>.<\/p>\n<p>&ldquo;Not only as a Native Hawaiian, but as a Native Hawaiian chef, <span aria-label=\"Ive\">I&#699;ve<\/span> noticed the lack of usage of our native ingredients in more ways, so leaving kalo as just poi or <span aria-label=\"paiai\">pa&#699;i&#699;ai<\/span> and you can do so much more and the same thing goes with <span aria-label=\"ulu\">&#699;ulu<\/span>,&rdquo; he said.<\/p>\n<p>As part of the project &ldquo;Consumer Beliefs and Acceptance of <span aria-label=\"Ulu\">&#699;Ulu<\/span>: An Exploratory Study,&rdquo; Fujimoto first emailed a survey to a list of home cooks and asked how often they used <span aria-label=\"ulu\">&#699;ulu<\/span> and what prevented them from preparing and eating it more often. Obstacles included &ldquo;availability in markets&rdquo; (80&#37;) and &ldquo;unsure how to cook&rdquo; (45&#37;). He then set about creating and demonstrating new dishes incorporating <span aria-label=\"ulu\">&#699;ulu<\/span>.<\/p>\n<p>&ldquo;We created four recipes that were able to incorporate <span aria-label=\"ulu\">&#699;ulu<\/span> in a way that was familiar to local home chefs,&rdquo; Fujimoto said. &ldquo;It was familiar and also delicious.&rdquo;<\/p>\n<figure id=\"attachment_145386\" aria-describedby=\"caption-attachment-145386\" style=\"width: 300px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2021\/07\/kapiolani-culinary-ulu-300x169.jpg\" alt=\"breadfruit on a tree\" width=\"300\" height=\"169\" class=\"size-medium wp-image-145386\" srcset=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2021\/07\/kapiolani-culinary-ulu-300x169.jpg 300w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2021\/07\/kapiolani-culinary-ulu-130x73.jpg 130w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2021\/07\/kapiolani-culinary-ulu.jpg 676w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-145386\" class=\"wp-caption-text\"><span aria-label=\"ulu\">&#699;Ulu<\/span><\/figcaption><\/figure>\n<p>Participants were provided frozen cooked <span aria-label=\"ulu\">&#699;ulu<\/span>, sweet potato, <span aria-label=\"luau\">l&#363;&#699;au<\/span> leaves and some other non-perishable ingredients in a packet that contained the four recipes, nutritional info about <span aria-label=\"ulu\">&#699;ulu<\/span>, and the links to surveys that were to be completed before cooking the four dishes and after. They were given six days to complete the pre and post surveys and the recipes.<\/p>\n<p>Post-cooking surveys showed that participants were almost twice as likely to cook <span aria-label=\"ulu\">&#699;ulu<\/span> and incorporate it into their diets, as they were at the beginning of the project.<\/p>\n<p>&ldquo;We just need people to take that extra step and think, &lsquo;Well, how can we bring this Hawaiian ingredient into the modern era, while still respecting it and its history and its impact on the world?&rsquo;&rdquo; Fujimoto said. &ldquo;There\u2019s a lot of potential not just for <span aria-label=\"ulu\">&#699;ulu<\/span> but for a lot of our Indigenous ingredients and not just Indigenous ingredients, but also local produce.&rdquo;<\/p>\n<p>Fujimoto graduated from <a href=\"https:\/\/www.kapiolani.hawaii.edu\/\"><span aria-label=\"Kapiolani\">Kapi&#699;olani<\/span> <abbr title=\"Community College\">CC<\/abbr><\/a> in spring 2021 with an associate\u2019s degree in Culinary and Pastry Arts and certificate in the Advanced Professional Program . He is back on campus, working on a certificate in sustainability and recently received an invitation to present his <span aria-label=\"ulu\">&#699;ulu<\/span> research project at the <a href=\"https:\/\/www.sacnas.org\/what-we-do\/conference2021\/\">2021 National Diversity in STEM Digital Conference<\/a> to be held in October.
