With strict health and safety protocols in place, the award-winning <a href=\"http:\/\/maui.hawaii.edu\/culinary\/\">Culinary Arts Program<\/a> continues to move forward by baking beautiful cakes during COVID-19.<\/p>\n<figure id=\"attachment_128463\" aria-describedby=\"caption-attachment-128463\" style=\"width: 250px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-128463\" src=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2020\/10\/maui-culinary-entremet-2.jpg\" alt=\"chocolate mousse cake\" width=\"250\" height=\"350\" srcset=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2020\/10\/maui-culinary-entremet-2.jpg 250w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2020\/10\/maui-culinary-entremet-2-214x300.jpg 214w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2020\/10\/maui-culinary-entremet-2-93x130.jpg 93w\" sizes=\"auto, (max-width: 250px) 100vw, 250px\" \/><figcaption id=\"caption-attachment-128463\" class=\"wp-caption-text\">Chocolate caramel mousse cake with a hazelnut dacquoise (Photo credit: <abbr>UH<\/abbr> Maui College)<\/figcaption><\/figure>\n<p>For the last two weeks, Advanced Baking 1 students have been working on <em>entremets<\/em> (pronounced \u2018ontra-may\u2019), stunning multi-layered mousse-based cakes with complementary flavors and varying textural contrasts.<\/p>\n<p>French in origin, entremets weren\u2019t cakes at all in the 12th Century when the word referred to the entertainment \u201cserved\u201d between the courses of a feast. It eventually evolved into small dishes served between savory courses.<\/p>\n<p>Today, they are most familiar as desserts and a way for pastry chefs and their students to demonstrate their baking skills. Entremets are complex cakes that involve difficult techniques and advanced knowledge of flavors and textures. Their construction is nothing short of architectural.<\/p>\n<p>Culinary Arts Program Coordinator Pastry Chef <strong>Teresa Shurilla<\/strong> teaches this advanced class and has decades of experience making these stunning cakes.<\/p>\n<p>\u201cThey\u2019re the best way to teach the foundation skills that are required for almost any complex cake or patisserie,\u201d Shurilla said. \u201cOur students always love this project, especially when they see the beautiful results.
