The latest edition of Human Nutrition<\/a><\/em> was recently published by the University of Â鶹´«Ã½<\/span> at M\u0101noa\u2019s College of Tropical Agriculture and Human Resources<\/a> Food Science and Human Nutrition Program, and Â鶹´«Ã½M\u0101noa’s Outreach College<\/a> as an Open Educational Resources<\/a> (OER) textbook.<\/p>\n

The original textbook serves as an introduction to nutrition for undergraduate students and covers basic concepts in human nutrition, key information about essential nutrients, basic nutritional assessment and nutrition across the lifespan.<\/p>\n

The 2020 edition adds an interactive layer, with 176 embedded learning activities, more than 100 flashcards at the end of sections to help students review important terms and more than 50 drag-and-drop activities to reinforce the learning objectives. These activities are designed to add engagement with the content, and support student learning through formative practice and immediate feedback. The book also provides an instructor-focused website with additional resources.<\/p>\n

Associate Professor Marie Kainoa Fialkowski Revilla<\/strong> of CTAHR<\/abbr>\u2019s Department of Human Nutrition, Food and Animal Sciences<\/a>, and Kellie Taguchi<\/strong> of the Office of Academic and Student Affairs, worked on the project.<\/p>\n

“Our efforts on this project truly demonstrate the value of working together or hoʻokahi<\/span> ka ʻilau<\/span> like ana,” said Revilla.<\/p>\n

“The Human Nutrition textbook is one of our most successful projects,” added William Chismar<\/strong>, UH<\/abbr> M\u0101noa Outreach College dean. “In addition to being used around Â鶹´«Ã½<\/span>, the textbook is being adopted at schools across the U.S.<\/abbr>, providing great recognition to CTAHR<\/abbr> and UH<\/abbr> M\u0101noa.”<\/p>\n

The project has eliminated textbook costs for more than 2,000 students who have taken the course at UH<\/abbr> M\u0101noa.<\/p>\n
