Craft. Create. <a href=\"https:\/\/www.acfchefs.org\/ACF\/Events\/Competitions\/StudentTeam\/ACF\/Events\/Competitions\/StudentTeam\/\">American Culinary Federation (<abbr title=\"American Culinary Federation\">ACF<\/abbr>) National Convention and Show<\/a>\u2014an elite collegiate culinary championship. They are one of six teams (five regional, one military) competing in the national championships in Orlando, Florida, on August 6. The team earned a spot after winning a gold medal and the 2019 Wild Card at the <abbr>ACF<\/abbr> Western Regional Student Competition. <\/p>\n<p>Team <span aria-label=\"Hawaii\">Âé¶¹´«Ã½<\/span> held a timed practice session on July 17, at the <a href=\"http:\/\/uhcc.hawaii.edu\/culinary\/\">Culinary Institute of the Pacific<\/a> to prepare for the competition in between classes and working. Team <span aria-label=\"Hawaii\">Âé¶¹´«Ã½<\/span> is made up of student chefs <strong>Greg Gamayo Jr.<\/strong>, <strong>Ethan Momohara<\/strong>, <strong>Ritchie Wong<\/strong>, <strong>Kainoa Reloza<\/strong> and <strong>Xiaoling Cheng<\/strong>, who are led by chef instructors <strong>Jason Peel<\/strong> and <strong>David Brown<\/strong>.  <\/p>\n<figure id=\"attachment_100258\" aria-describedby=\"caption-attachment-100258\" style=\"width: 300px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2019\/07\/kapiolani-culinary-dish-300x169.jpg\" alt=\"food\" width=\"300\" height=\"169\" class=\"size-medium wp-image-100258\" srcset=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2019\/07\/kapiolani-culinary-dish-300x169.jpg 300w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2019\/07\/kapiolani-culinary-dish-130x73.jpg 130w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2019\/07\/kapiolani-culinary-dish-630x353.jpg 630w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2019\/07\/kapiolani-culinary-dish.jpg 676w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-100258\" class=\"wp-caption-text\">Smoked beets with avocado, Asian pear, basil oil and barbecue vinaigrette<\/figcaption><\/figure>\n<p>Each team will have to prepare a four-course menu, with 110 minutes to prep, cook, plate and serve all dishes to the judges. The teams will be judged on presentation, flavor, nutritional value, cooking technique, teamwork, sanitation and timing. <\/p>\n<p>Team <span aria-label=\"Hawaii\">Âé¶¹´«Ã½<\/span> started down the road to nationals last year, exploring their flavor profiles, brainstorming what they wanted to cook that would best represent themselves and <span aria-label=\"Hawaii\">Âé¶¹´«Ã½<\/span>, and refining their menu items along the way.<\/p>\n<p>&ldquo;It\u2019s a lot of tasting, a lot of recipe testing. I know for me personally, I\u2019ve made about 7 different types of ice cream just to get it right,&rdquo; said Reloza, <span aria-label=\"Kapiolani\">Kapi&#699;olani<\/span> <abbr title=\"Community College\">CC<\/abbr> Team <span aria-label=\"Hawaii\">Âé¶¹´«Ã½<\/span> student chef. <\/p>\n<p>He added, &ldquo;The school teaches you so many techniques and flavor pairings. It also teaches you timing and organizational skills that are necessary for the competition, as well as your life to come.&rdquo; <\/p>\n<p>Crediting their camaraderie and how well they work together as an advantage, the <span aria-label=\"Kapiolani\">Kapi&#699;olani<\/span> team is hungry to bring home the gold. The team last won a national gold medal in 2009 and silver medals in 2013 and 2017. <\/p>\n<p>&ldquo;It feels like you\u2019re competing for everyone and then yourself, first representing your team, the college, <span aria-label=\"Hawaii\">Âé¶¹´«Ã½<\/span>. We really want to showcase all the great food and culture that <span aria-label=\"Hawaii\">Âé¶¹´«Ã½<\/span> has to offer,&rdquo; said Gamayo, <span aria-label=\"Kapiolani\">Kapi&#699;olani<\/span> <abbr>CC<\/abbr> Team <span aria-label=\"Hawaii\">Âé¶¹´«Ã½<\/span> student chef. <\/p>\n<p>&ldquo;We want to be recognized nationally, as not only a great culinary school, but as a culinary destination as well.
